Strawberry Fruit Rollups
 
Ingredients:
 
  1. 1 cup Silk Vanilla Soy Yogurt
  2. 1 pint strawberries
  3. nonstick cooking spray 
         
Directions:
 
Puree the strawberries in a food processor or your blender.
 
Lay down the fruit roll-up sheet in the dehydrator and spray lightly with nonstick cooking spray*. Spread the yogurt thinly over the drying sheet. Drizzle the pureed strawberries over this; use a toothpick to make marble effect. The measurements for ingredients are approximate; the overall goo should be about 1/4 inch thick. Dehydrate roughly 8hrs on 135.  Cut into strips.
 
*if you have no dehydrator, spray cookie sheet with nonstick cooking spray. Lay down the ingredients as described above.  Cook at lowest oven setting (usually 250) for around 4-6 hours. Cut into strips.
 
 
 
 
 
Kiddie Casserole
 
 
Ingredients:
 
  1.     2 medium potatoes
  2.     6 vegan sausages or SOS mix equivalent
  3.     2 tins of British baked beans
  4.     4 tablespoons oil or margarine
  5.     4 tablespoons white flour
  6.     1 cup soya/oat/rice milk
  7.     1 teaspoon salt
  8.     1 teaspoon pepper (or more to taste)
  9.     1 teaspoon garlic puree
  10.     1 finely chopped onion
 
 
Directions:
 
Slice the potatoes (skins on if you prefer) thinly and boil until almost done. Drain and set aside.
 
Cook sausages according to specifications, and slice into chunks.  Combine them with the baked beans in a casserole dish. Layer the potatoes on top, covering everything underneath.  depending on your casserole dish, you may need more potato.
 
In a separate pan, heat the oil on medium heat, and fry the chopped onion until soft. Add 1/4 of the soymilk and once hot, whisk the flour in slowly.  Then add the rest of the soymilk while stirring. Once gently bubbling, take the pan off the heat and add the remaining ingredients. Stir thoroughly, then pour the milky sauce over the potatoes and bake in a 220 degree centigrade (425 Fahrenheit) oven for 20-30 minutes, until brown and bubbly.
 
Kids love this one, but Ill confess, Im 22 and make this for myself all the time.

Nutty Orange Wafflewiches
 
 
Ingredients:
 
  1.     3 cups quick oats (raw)
  2.     3 cups soymilk
  3.     1 cup powdered coconut
  4.     1 cup All-Purpose flour
  5.     1/2 teaspoon salt
  6.     1 teaspoon vanilla extract
  7.     2 tablespoon Oil (choose one that doesn’t have a strong flavor, maybe Canola)
  8.     2 teaspoon grated lemon peel
  9.     1 cup orange juice from concentrate
  10.     1/2 teaspoon grated orange peel (if you have a mandarin or tangerine on hand and can grate the rind, do it, it is even sweeter than orange zest and gives a wonderful flavor!)
  11.     1 1/2 cups brown or date sugar
  12.     1/2 teaspoon almond extract
  13.     2 eggs, or 2 tablespoon Egg Replacer dissolved in 1/4 cup water and well beaten till it resembles soft egg whites
  14.     vanilla ice cream of your choice.
  15.     You will also need plastic wrap.
  16.     4 tablespoon All-fruit orange jam
  17.     About 1 and 1/2 cups to 2 cups ground walnuts or pecans
 
 
Directions:
 
To make batter:
 
Mix flour, oats, coconut, lemon and orange rinds, salt and sugar, combining evenly.
 
Mix soy milk with orange juice from concentrate. Incorporate soy milk-juice mixture, vanilla and almond extract.  Mix in the egg replacer. Pour into a bowl and allow to rest for about an hour or more in the refrigerator.
 
Before taking out of the fridge, heat up your waffle iron and prepare your toppings and filling.
 
Filling:
 
Any walnut or vanilla ice cream / dream of your choice.
 
Topping  (Use when ready to serve)
 
In a small sauce pan melt 4 Tbs. All-fruit orange jam and set aside.  Optional (but highly recommended) About 1 and 1/2 cups to 2 cups ground walnuts or pecans.
 
How to make your wafflewiches
 
Once an hour has passed, and your waffle iron is hot,  pour the mixture into it as usual and bake. Placing the waffles in a bowl or cookie sheet as you make them. Once you have them all done,  place some pecan ice cream on top of one and cover with another waffle to make a sandwich, careful pressing down. Take the sandwich and gently roll the sides on the ground pecans or walnuts. Carefully wrap your sandwich in the plastic wrap. Place in a container that will go into the freezer. Repeat this procedure until you have finished the waffles. When you are ready to serve, drizzle a little bit of the melted jam on top of each wafflewich.
