Zesty Cabbage-Ramen Salad
 
 
Ingredients:
 
  1.     2 package vegan Ramen noodles, broken into bits
  2.     chopped or shredded cabbage
  3.     sunflower seeds
  4.     almond slivers
  5.     1/2 cup olive oil
  6.     1/3 cup vinegar (I use mostly cider and a little red wine)
  7.     2 tablespoons sugar
  8.     2 Ramen seasoning packets
 
 
Directions:
 
Make the dressing with the olive oil, vegan sugar, vinegar, and seasoning packets all nice and stirred up.
 
Serves: many
 
Preparation time: 5 minutes
 
 
 
 
Crispy Fresh Cole Slaw
 
 
Ingredients:
 
  1.     1 package of angel hair coleslaw
  2.     1 bell pepper, chopped thin
  3.     1/2 an onion, chopped thin
  4.     salt and pepper
  5.     1 teaspoon sugar
  6.     3 tablespoons vinegar
  7.     3 tablespoon oil
  8.     1 teaspoon celery seeds
 
 
Directions:
 
Wash and drain the coleslaw.  Mix chopped onions, chopped bell pepper and coleslaw.
 
In a bowl prepare the dressing mixing well oil, vinegar, salt, vegan sugar, pepper and celery seeds.
 
Season coleslaw with dressing, mixing well.
 
Refrigerate and serve.

Cabbage Peanut Salad
 
 
Ingredients:
 
  1.     2 cups cabbage (finely chopped or shredded)
  2.     3/4 cup ground raw peanuts (you can use more or less as per your taste)
  3.     sea salt and pepper
  4.     lime juice
  5.     1/4 cup finely chopped cilantro/coriander leaves
 
 
Directions:
 
In a bowl toss in all the ingredients and mix well and serve. You can serve immediately or chilled if you prefer chilled.
