Risotto with Kale & Leeks
Ingredients:
- 5 cups chicken broth
- 1 tablespoon olive oil
- 2 cups thinly sliced leek (about 2 large)
- 1 1/2 cups arborio rice
- 1/4 cup white wine
- 3 cups coarsely chopped Kale
- 1/4 cup grated Parmesan
- 1/8 teaspoon black pepper
- 6 lemon wedges
Directions:
Bring the chicken broth to a simmer in a medium saucepan (do not boil). Keep warm over low heat.
Heat oil in a large saucepan over medium heat. Add leek, saute 4 minute or until tender. Add rice; cook 1 minute, stirring constantly. Stir in wine cook 1 minute or until the liquid is nearly absorbed stirring constantly.
Reduce heat to low; stir in Kale. Add broth 1/2 cup at a time, stirring constantly until each portion of the broth is absorbed before adding the next portion (about 25 minutes). Stir in cheese and pepper.
Serve with lemon wedges, and enjoy!

Slow Roasted Root Vegetables

Ingredients:
- 3 large potatoes
- 3 large carrots
- 3 large beets
- 8 large garlic cloves, peeled
- 2 tsp rosemary, fresh or powdered
- 2 tsp cumin, ground
- 1 tbsp black pepper, course ground
- 2 tsp sea salt
Directions:
Preheat oven to 250 deg F. This is a "low & slow" recipe, which takes a little bit of patience, but well worth it! You can vary the ratio of vegetables to suit your tastes, as well as the choice and amounts of herbs and spices.
Cut the potatoes, carrots, and beets into large chunks. The size of the chunks determines which vegetable cook the fastest: the potatoes and beets should be the largest chunks, with the carrots being a little smaller / thinner. You'll get the feel for the right size with practice.
Place the chunked potatoes, carrots, and beets in a large mixing bowl, along with the peeled garlic cloves. Add oil and sprinkle in the spices, while stirring until all the vegetables are thoroughly coated.
Spread the mixture evenly onto a baking tray, and place into the oven. Cook for about 2 hours, or until done.
Serves: 3 - 4

Organics to You now accepts SNAP Dollars and EBT Cash on all routes as well as with any pick up orders! You can set your preferred payment method during checkout.
ALL SNAP customers will automatically qualify for the Double Up discount which gives customers up to $20 off their fruits and veggies with a $1 for $1 match from the Oregon Food Bank.
You are asked to put your SNAP card number into the system during registration. You are welcome to have a credit/debit card on file as well that we could charge for any non-eligible items (ex: driver tips or gift items). We will always defer to your preferred payment choice.
Organics to You is not allowed to save your PIN code, so you must log in to enter your PIN every time you have an order delivered.

For SNAP payments, your order must be in by 8am the day before delivery, then orders are processed in the late morning, and you will receive an email asking for payment around 11am the day before delivery.
Please check your email for payment notifications and delivery notifications.
SNAP payments must be made online by 2am on the day of delivery.

Q: What is SNAP EBT?
Electronic Benefits Transfer (EBT) is an electronic system that allows a Supplemental Nutrition Assistance Program (SNAP) participant to pay for food using SNAP benefits. When a participant shops at a SNAP authorized retail store, such as Organics to You, their SNAP EBT account is debited to reimburse the store for food that was purchased. All food products are SNAP eligible at Organics to You.
Q: What is Double Up Food Bucks (DUFB) and the Double Up discount?
Double Up Food Bucks (DUFB) provides all SNAP recipients with a $1 for $1 match (up to $20) to buy healthy fruits & vegetables when they use their EBT card to purchase produce. At Organics to You, the Double Up discount will automatically be applied to all SNAP purchases and all SNAP customers will get 50% off any purchase of fresh fruits and vegetables, up to $20 off. Only Produce Bins, Produce Add-ons, and Produce by the Case are eligible for the Double Up discount. Grocery items such as milk, eggs, meat, and rice & beans are not eligible for the Double Up discount, but they are still eligible for SNAP payments.
Q. What products are eligible for SNAP EBT at Organics to You?
All food items are eligible for SNAP EBT at Organics to You. Gift baskets, clothing, and driver tips are not eligible.

Customers shop as normal on the OrganicsToYou.org website. Customers can place items in their cart and checkout. When entering payment information, customer should choose SNAP as their preferred payment method and enter their SNAP card into the system. Customer will still be required to enter their PIN through an emailed link on the day before delivery..
Q. How does a customer sign up for the Double Up discount?
All Organics to You customers who choose SNAP as their payment method are automatically enrolled in the Double Up Food Bucks program. The discount will be applied to their account each time an order runs.
Q: Can Washington residents use their SNAP EBT at Organics to You?
Yes, ALL customers in ALL delivery zones can use their SNAP EBT at Organics to You.
Q: Who is eligible for Double Up Food Bucks?
All customers who choose SNAP as their preferred payment method at Organics to You will automatically be credited with the Double Up Food Bucks discount each time an order runs.
Q. How does the Double Up discount work with an order from Organics to You?
The Small Bin is $45 at Organics to You. The Double Up discount would apply for anyone paying with SNAP at the door, and the discount will match the first $20 spent on fruits and veggies. That means you pay $20 with your SNAP EBT card and the Oregon Food Bank matches it with another $20. That's $40 and you would then cover the last $5 for the Small Bin. So you pay $25 with SNAP EBT at the door, and the discount covers $20.
A Bin for One is only $36, so the Double Up discount will be dollar for dollar. Double Up Food Bucks will match $18 and the customer will pay $18 with SNAP EBT at the door. A Bin for One ($36) plus a Salad Add-on ($20) is $56, so Double Up would match the max $20 and the customer would pay $36 with SNAP at the door.
Only produce items (fruits and veggies) are covered by the discount so groceries like milk, eggs, and rice will not be matched dollar for dollar. However, all non-produce groceries still are eligible for SNAP and would be added to the SNAP total due with your order.
Q. How does the customer pay with SNAP EBT?
Customers will be emailed payment instructions the day before their Organics to You delivery arrives. The customer must log in to enter their PIN and finalize the payment. Payment may be split among SNAP Dollars, EBT Cash, and/or credit/debit card. Driver tips and other non-SNAP-eligible items cannot be paid for with SNAP. Payment must be made by 3am on the day of delivery or the order will be cancelled. The customer is texted a 3-hour delivery window in which to expect the delivery, but the customer is not required to be at home. Delivery instructions can be added to an account if Orgnaics to You drivers need a door code to get, should leave it somewhere other than "at the front door", or any other special circumstances.
Q. What if the customer is not there to receive the order?
Customers no longer need to be home to accept their Organics to You deliveries. Since payment is now made online, the driver will just leave the order at your door. Please let us know if there are any special delivery instructions that our drivers need.
Q. Can a customer pay online with SNAP EBT?
Yes, we now have online SNAP/EBT payments available! Customers can store their card number on file but will be emailed payment instructions one day before delivery. Customers must log-in to enter their PIN to finalize payment for each order. Customers can also split payment over any combination of SNAP, EBT, and credit/debit card. Payments must be made by 3am on the day of delivery, or the order will be cancelled.
Q. Is there a limit on the amount of Double Up customers can earn and redeem at one time?
There is a limit of up to $20 per transaction. Auto-discounts provide up to a $20 match each transaction. So, if a customer spent $50 on fruits and veggies they would receive $20 off, and the new total would be $30.
Q. How does the customer get the Double Up discount?
The customer will earn the Double Up discount every time they purchase eligible items (see above) and pay using their SNAP benefits. All SNAP customers at Organics to You will automatically receive the Double Up discount on their account statement. The customer will then be required to pay the remaining balance with their SNAP EBT.
Q: Why isn’t this program available to non-SNAP customers?
Double Up is a federally funded program. According to Federal guidelines only SNAP/EBT recipients are eligible to participate.
Q. Can a SNAP customer who pays with their credit/debit card still receive the Double Up discount?
No, a customer must pay with their SNAP EBT in order to receive the Double Up discount. The discount will be removed if payment is made with a credit/debit card.

Spaghetti Squash Casserole
Ingredients:
- 1 large spaghetti squash
- 1 large onion, minced
- 5-6 cloves garlic, minced
- 1 cup mushrooms, chopped
- 1 tablespoon olive oil
- 1 plantain, sliced
- 1 28 oz. can diced tomatoes
- 1 16 oz. can crushed tomatoes
- 1 cup cooked cracked wheat, bulgur wheat, or couscous (have fun and experiment)
- basil, oregano, cayenne, and parsley
- whatever seasonings that strike you at the moment - that's what I used last time, and it was great!
Directions:
Split the squash in half and cook upside-down in water for about 20-30 minutes. until tender. Pour 2 cups hot water over grains of choice and let sit cover for approximately 15 minutes.
Meanwhile, sauté the onion, garlic, mushrooms and plantains in the oil. If needed, add some water. Add cans of tomatoes and spices and let simmer for 15-20 minutes. Add drained grains and simmer another 5 minutes.
Pour the sauce over spaghetti squash on individual plates.
Enjoy!

Spinach & Mushroom Quiche
Ingredients:
- 4 eggs
- 1 tsp salt
- 1 1/2 cups cooked rice
- 6 tbsp milk
- 3 oz grated cheese
- 2 1/2 cups cooked spinach (squeeze and pat dry to remove excess water)
- 3/4 cup sliced mushrooms
Directions:
Beat 2 eggs, add rice, 1/2 cheese, salt and mix.
Press this mixture into 9" pie plate to form a crust.
Beat the remaining eggs, stir in spinach, cheese, milk, & mushrooms. Pour over the pie plate, bake in oven at 375 deg F for 30 minutes.
Serves: 4 - 6

Strawberry Fruit Rollups
Ingredients:
- 1 cup Silk Vanilla Soy Yogurt
- 1 pint strawberries
- nonstick cooking spray
Preparation:
Puree the strawberries in a food processor or your blender.
Lay down the fruit roll-up sheet in the dehydrator and spray lightly with nonstick cooking spray. Spread the yogurt thinly over the drying sheet. Drizzle the pureed strawberries over this; use a toothpick to make marble effect. The measurements for ingredients are approximate; the overall goo should be about 1/4 inch thick. Dehydrate roughly 8hrs on 135. Cut into strips.
if you have no dehydrator, spray cookie sheet with nonstick cooking spray. Lay down the ingredients as described above. Cook at lowest oven setting (usually 250) for around 4-6 hours. Cut into strips.

Your credit card will be authorized when you click this button, and your card will be charged for your first delivery. Gift Certificate purchases are also charged immediately, and the certificates are sent to the email address you provide. SNAP/EBT Cards will be saved in the system, but you will be emailed a payment link the day before delivery. The customer is then required to log in and enter your PIN to finalize the payment. If payment is not made by 3am the day of delivery, then the delivery will be cancelled. If you set up recurring deliveries, you will be billed on a recurring basis as orders are prepared for delivery. Billing occurs approximately one day before delivery. Delivery is free of charge, and there is no obligation to continue your subscription: you can cancel at anytime. (Please note 24 hour policy below) You can adjust your order as often as you like, but you must always receive a produce bin (or gift basket) in order to receive delivery (i.e., you cannot receive a delivery of just a carton of milk and some eggs). You will be registered to receive our weekly e-Newletter and other automatic emails regarding service from Organics to You, but you can always unsubscribe to such emails. We NEVER share or distribute your personal information with anyone, anywhere. Any changes/additions/cancellations must be submitted with at least 24 HOURS ADVANCE NOTICE. We try to help with last minute requests, but we are not always able to get to them all. We have to place orders with our farmers and suppliers, and we need accurate projections to do so. Cost increases may occur (on average every three years), but all prices will be reflected accurately on the receipt received. Tofu Avocado Breakfast Scramble
Ingredients:
- 4 oz tofu (regular, extra firm)
- 2-3 dashes ground turmeric
- 1/4 cup fresh spinach
- 1/2 ripe avocado
- small handful shredded soy cheese
- dash black pepper
- 1 teaspoon olive oil
Directions:
Crumble tofu and sauté with spinach and olive oil, until spinach is limp. Add turmeric until nice bright yellow color (careful not to add too much).
Continue cooking over medium heat 1-2 minutes. stir in chopped avocado, and top with grated soy vegan cheese, and pepper to taste.
I add tomatoes sometimes, basically you can put whatever vegetables you want in it as long as you have the right amount of turmeric it will taste delicious.

We appreciate your business and continued support during these extraordinary times. Because we have seen such a surge in registrations in the past weeks, we have decided to implement a temporary waiting list for our services. We have been able to safely absorb unprecedented growth thus far, but in order to assure that we have the proper infrastructure in place to serve our community for the long run, we will not be accepting new registrations for the next week. We are already working to scale up our operations with added refrigeration space, new vehicles and routes, and new employees, and we definitely have the room to grow.

Organics to You is a locally owned and operated company, who has been doing business in the Portland, Oregon area, since 2001. Zesty Cabbage Ramen Salad
Ingredients:
- 2 package vegan Ramen noodles, broken into bits
- chopped or shredded cabbage
- sunflower seeds
- almond slivers
- 1/2 cup olive oil
- 1/3 cup vinegar (I use mostly cider and a little red wine)
- 2 tablespoons sugar
- 2 Ramen seasoning packets
Directions:
Make the dressing with the olive oil, vegan sugar, vinegar, and seasoning packets all nice and stirred up.
